It is Zucchini Bread Time - Do You Like it Regular Or Chocolate?

Its that time of year again, when someone you know brings over a very big zucchini. And although your thankful, you are never really sure what to do with it. Making bread is one way to enjoy this big veggie.

Here are two yummy recipes

The Regular

3 Eggs
1 cup of oil
2 cups of sugar
2 cups of grated zucchini (leave the peelings on when you grate)
3 cups of flour
1 teaspoon baking soda
1/4 teaspoon baking powder
1 teaspoon salt
3 teaspoons cinnamon
1/2 cup of walnuts

Beat eggs until light and fluffy, then add the first 3 ingredients, mix well. Then mix in all the dry ingredients, and finally the nuts. In a greased pan, add some flour to coat it well, tap out excess. This recipe can make 3 small loaf pans or 2 large loaf pans. Pour batter into pans and bake at 325 degrees for an hour or until its done. Stick a toothpick in it to test if its done. If there is any batter on the tooth pick keep cooking, if its clean its done.

The Chocolate Zucchini Bread Recipe

1/2 cup margarine
2 and 1/2 cups unsifted flour
1/2 cup vegetable oil
4 Tablespoons cocoa
1 and 3/4 cup sugar
1/2 teaspoon baking powder
2 whole eggs
1/2 teaspoon cloves
1 teaspoon vanilla
2 cups finely chopped zucchini
1/2 cup of sour milk
1/4 cup chocolate chips

Cream margarine, oil and sugar. Add eggs, vanilla and sour milk. Mix dry ingredients and mix with mixer. Stir in finely chopped zucchini and chocolate chips. Spoon it into a basic rectangle cake pan (13x9). Bake at 325 degrees for 40 to 50 minutes.

That is all you need. Helpful hint: Grate or finely chop all of the zucchini. Measure two cup increments and freeze in baggies. Make sure and use the grated for the regular and the chopped for the chocolate. You can use it all year round for more bread that makes a great gift.
